Meet the Maker
Run by Chef Debu Saha, BHK Roll isn’t your typical downtown food court stall. Hailing from a family of restauranteurs, Chef Saha has been cultivating his culinary talents from an early age. His talents have brought him from his home city in Calcutta, to Agra, Goa, Madras, Al-jubail, Doha, New York, Quebec, Switzerland, and finally, Toronto. Chef Saha has been in Toronto for the last 30 years and while BHK Roll is his current project, it’s not his first. His previous projects include The Biryani House and Debu’s Nouvelle Indian Cuisine. During the pandemic, he closed his restaurants and opened BHK Roll. One thing is for sure— this fast casual food court stall will knock your taste-buds off.
What Inspires Their Food
Chef Debu Saha brings his experience working in French and Indian restaurants all around the world. His style is Nouvelle Indian, where he naturally brings his training in the finest dining establishments. Think deeply flavourful sauces, perfectly cooked flatbreads, tamarind and mint chutneys, biryanis, chaats, and creative items like the Bombay Club Sandwich. At BHK Roll, he brings his talents and experience to the plate with innovative and flavour-packed options that service Toronto’s increasingly on-the-go culture of demanding eaters. Those who have worked with him often describe him as creative and incredibly hard working. At BHK Roll, you’ll never find Chef Debu or his team compromising on quality or taking any short cuts.
About Today’s Snacks
Your snack today is a Tandoori Chicken Gratin—a beautifully spiced chicken baked with oozy cheese in gratin-style. This flavour-packed gratin is served with khameeri roti, which was freshly baked in BHK Roll’s new tandoor. Khameeri roti is made from a leavened dough, making it fluffy and spongy, and the perfect pairing for this saucy gratin.
